Shahi Mutton Leg Roast. Ingredients: 2kg Goat/lamb leg (with some fat on it), Ginger paste 2.5 tbsp, Garlic 2.5 thsp, Fruit/malt vinegar 6 tbsp, Salt 1.5 tbsp, Ghee 3/4 cup melted, Krea spice 6 tbsp, Ripe or pawpaw skin paste 1.5-2 tbsp, choice of your veggies.

Method: Marinade the leg with pawpaw paste, add rest of the spices, add yogurt, mix well & give a good 10 minute prick all over the leg, wrap with ding wrap & leave for marinade for 4-5 hours at room temperature or leave it in fridge depending on when you are ready to cook it. Preheat the oven to the highest for 20 minutes. Lay your veggies on the tray, place the marinated leg on the veggies and add the ghee on the leg. Pace the tray into the oven on the highest temp for 5-8 minutes then lower the temp to 180-200 & allow the meat to cook for 2+ hours till the meat is done. If there is no juice left in tray add stock/water to not burn the veggies. Take a piece of butter, give it a rub on mutton leg and grill on high. Make the sauce thick on stove & enjoy.
