Today I am going to be sharing with you a creamy lamb recipe .
This recipe has been in the family for generations and has been passed down over the years. I hope you enjoy it as much as we do.
1kg lamb shoulder & leg meat cut into round pieces ( brined
1 Tsp krea ginger powder or fresh ginger
1Tsp krea garlic powder or fresh garlic
1 cup Ghee
2Tbs fresh ginger or krea ginger powder
2 fresh garlic or krea garlic powder
10 small shallots
10 baby tomatoes
4 Roma tomatoes
10 baby potatoes
5 whole Green jalapeño
3/4 cup double cream yoghurt
1/2 cup golden fried onions made into a purée with 3tbs sunfoil oil
1 Tsp krea kalya spice
Salt to taste
1/4 cup fine almond powder
2 Tbs sweet vinegar ( white wine / malt )
4 Tbs sunfoil oil
2 Tsp crushed green chilli
1 Tsp krea Kashmiri chilli powder
~Wash and brine the meat and marinate with 1tsp ginger and garlic overnight or minimum few hours
~Heat oil in a thick based pan , gently sautée the vegetables till they are glossy and remove them aside using a slotted spoon.
~In the same pan now add the marinated meat along with the remaining ginger and garlic powder.
~ sautee for a few minutes add water if required and allow the meat to cook gently till it’s approximately halfway cooked.
~ add the baby potatoes and leave to cook till the meat & the potatoes are soft and tender.
~ add the yoghurt, kalya spice , onion paste and mix well , almond powder now add the remaining vegetables and allow to steam for a few minutes.
~ in a separate pan gently heat the green chilli and Kashmiri chilli and pour over the meat .
~ lastly add the vinegar and serve with naan, rolls or steamed rice.
