Cashew chicken Stirfry Boneless Chicken 500gm

Boneless chicken 500gm cut into think strips
( Thigh meat is the best option here but You could easily use Breast )
For Marination
Dark soya sauce 2Tbs
Sweet soya sauce 2Tbs
Red chilli paste 1Tbs
1 Egg
1/2cup Flour
1/4 cup corn flour
1/2tsp ginger
1tsp Garlic
Salt to taste
1-2tsp pepper
1/2tsp Chinese five spice powder
1/4tsp baking powder
Marinate all the above ingredients for minimum 1hour
Deep fry in oil , making sure the pan is not overcrowded so that chicken turns out crispy . Keep aside
For sauce
2Tbs oil
3 Dry red chilli
6tbls cashews broken into pieces
1 large onion chopped into big quarters
1Tbs ginger Garlic paste
1 Tbs red chilli paste
1 Tbs Dark soya sauce
1Tbs sweet soya sauce ( available from @woolworths_sa )
1/4cup Tomato sauce
Salt to taste
3Tsp sugar
In a pan heat the oil , fry the cashews till light brown and keep aside.
Add ginger garlic and red chili pate and flash fry, add the onions and give it a quick stir.
All this should be done on high heat
Mix the remaining ingredients in a bowl and add to the pan . Allow to come to a boil , add the fried chicken and cashews.
Stirfry for a quick minute , taste for seasoning. Garnish with loads of spring onions and toasted sesame seeds

Serve with steamed jasmine rice
